Maple Nut Granola
Save money and have fun shopping in your grocer’s bulk section for this delicious granola recipe’s ingredients. Be sure to pick up a Wisconsin-produced maple syrup while you’re at it.
Ingredients
4 cups regular rolled oats
1 cup oat flour, (to make your own, grind oats in a spice grinder or blender)
½ tsp. salt
1 cup raw nuts, (almonds, walnuts, cashews, etc.)
¼ cup raw pumpkin or sunflower seeds
¼ cup grated dried coconut
⅔ cup maple syrup
⅓ cup oil, (we recommend Driftless Organics cold-pressed local sunflower oil)
1 tsp. ground cinnamon
½ tsp. ground allspice
1 tsp. freshly grated orange peel, (optional)
⅔ cup dried fruit of choice, (raisins, chopped dates, figs, cranberries, etc.)
Directions
Preheat oven to 275 degrees. Oil two rimmed baking sheets.
In a large bowl, mix oats, flour, salt, nuts, seeds, and coconut.
In a small saucepan, bring maple syrup, oil, cinnamon, allspice and orange peel (if using) to a boil. Immediately remove from heat, drizzle over oat mixture and thoroughly mix with a wooden spoon or your hands.
With your hands, pick up clumps of granola and spread over oiled sheet pans in a single layer, breaking up any large clumps. (Depending on size of your pans, it may not all fit.)
Bake for 35 minutes, stirring a couple of times and rotating the pans to ensure even baking.
Add dried fruit and bake for another 5-10 minutes, until golden brown. Cool thoroughly and store in an airtight container.
