Jesse’s Spiced Pumpkin Pancakes
These fluffy spiced pumpkin pancakes will make an ordinary weekend morning extra special.
Ingredients
1 ½ cups flour
2 tsp. baking powder
½ salt
½ tsp. cinnamon
½ tsp. nutmeg
½ tsp. ground ginger
2 Tbsp. melted butter
2 Tbsp. granulated sugar
1 egg
1 cup cow’s milk or unsweetened almond milk
8 Tbsp. pumpkin puree
Dark chocolate chips (optional)
Directions
Mix dry ingredients in a large bowl and set aside. Mix wet ingredients in a separate mixing bowl. Fold wet ingredients into the dry ingredients (don’t overmix). Pour batter onto heated pan (6-inch pancakes are a good, easy-to-flip size). Cook on each side until lightly brown.
Delicious chocolate option: Pour half amount of pancake batter onto pan, sprinkle dark chocolate chips onto pancake then spoon additional batter to cover the chips. Cook on each side until lightly brown.
Suggestions
Serve pumpkin pancakes with butter, syrup, nut butter, jam or honey.
