What happens when the Underground Food Collective divides and conquers? Besides bottomless collaboration and creativity, impressive use of shared kitchen space and mounds of prepped, local ingredients—we discovered that it is possible for them to pull off two large catering gigs on the same day. Urban-homesteaders Jonny and Ben Hunter and Gavin Fons guided the way, revealing a brilliant and fluid game plan. The Collective’s laid-back, down home vibe had us thinking they were cooking for family and friends rather than 400 eaters attending Outstanding in the Field at Troy Gardens and the Children’s Museum Grand Opening dinner that evening. And perhaps that vibe is the best indicator that they are doing what they love—it comes to them simply and naturally, surrounded by a team that feels more like a family, cooking with a shared vision for going beyond the recipe. All of this with designs to give the eater a true food experience.

Underground Food Collective is a partnership between six Madisonians with help from their families, friends, four employees and a variety of contractors, farmers and partner organizations.
