Beet Kvass Cocktail
Home-fermented beet kvass is a great way to give a probiotic boost to this locally inspired cocktail.
Ingredients
Crushed ice
1 oz. beet kvass
1 1/2 oz. gin
1/2 to 1 oz. elderflower liqueur
1/4 to 1/2 oz. lemon or lime juice
6 oz. plain or flavored sparkling water
Lemon slice (to garnish)
Directions
Fill a tall glass with crushed ice. Add all ingredients except lemon and stir. Garnish with lemon slice and enjoy!

Fieldnotes Gin from La Crosse Distilling Co. and Ginger Sparkle by WiscoPop make a fantastic combination in this colorful cocktail. St. Germain elderflower liqueur is easy to find, but you can also try any floral or fruity cordial, liqueur or shrub, such as red currant cordial, orange liqueur or raspberry shrub.
